MOSIASHVILI

THE ORIGIN

The Mosiashvili hives are located in an isolated area in the Caucasian Alpine Zone, within a unique microclimate shaped by altitude, isolation, and seasonal bloom. The bees forage on an untouched ecosystem between 1,500 and 1,800 meters above sea level.

The location is fifteen kilometers beyond the nearest road, settlement or industrial influence. This deliberate isolation was chosen nearly a century ago, to escape agricultural runoff.

There are no farms, factories or households within range.

The bees forage on unspoiled nature.

THE CHARACTER

Each harvest is inimitable, dictated and shaped by the season. It cannot be engineered or repeated.

Independent laboratory analysis records different proportions of botanical pollen every year, native only to this specific altitude and ecosystem. Every grain of pollen has been examined and counted under the microscope. Mosiashvili honey does not contain pollen from any cultivated crops, confirming the isolation. The composition shifts from one harvest to the next.

The 2025 Harvest is intensely floral, completely wild. As if you could taste the individual flowers themselves, with an icy finish of thyme.

Hogweed, brown knapweed, saw-wort, bugloss, comfrey, bellflower, teasel, bird's-foot trefoil, clover, wild thyme, mignonette, willow, mullein, birch, sun rose.

THE VESSEL

Light degrades raw honey. Unprotected exposure breaks down volatile aromatics and the enzymatic life.

Mosiashvili honey is sealed in Miron violet glass. Engineered to filter the destructive spectrum of light, the glass acts as a preservation chamber.

The honey is suspended in near darkness.

ENZYMATIC VIABILITY

As a living, biologically active substance, honey naturally crystallizes over time. This structural shift is the proof of unaltered enzymatic activity.

Bottled as the bees made it, Mosiashvili honey is raw. Never heat-treated, filtered, or processed for commercial uniformity.

REGENERATIVE

The endemic Caucasian grey bee, Apis mellifera caucasica, is known for an exceptionally long proboscis. This allows the colonies to reach nectar deeper in the alpine flora than any other bee.

The bees pollinate a significant proportion of the wild flora across their territory. Protecting the colonies protects the landscape they sustain.

To ensure the survival and health of the colonies, the annual harvest is limited to the seasonal surplus.

THE FAMILY

Archaeologists recovered the world's oldest known honey, dated to 5,500 years ago, from Georgian soil.

The Mosiashvili family has kept hives in the Tianeti mountains for four generations, since 1928, continuing the lineage of Georgian apiary heritage. Through war, Soviet collectivisation, and the turbulence that followed. The hives were never surrendered, moved, or industrialised.
